I was curious on how the paws of small animals (squirrel, weasel, fox, rabbit) are taxidermied seeing as their so tiny. Are they specially dried or is there some sort of skinning technique used...?

Just curious ^^

With any animal you will skin down to the toe joints of the feet which just leaves some cartlage and tendons which will be fine to tan. You'll go past the pad of the foot. Something small such as a squirrel just go as far as you feel comfortable. No more than will be left in the foot it'll be fine. Just tan normally.
